Perfect Brunch – Chilaquiles

Sunday’s are my favorite, one of the main reasons is brunch! My weekday mornings are typically easy grab and go foods but on the weekend, I really want to savor some hearty breakfast food. My roots make me automatically love anything inspired by Latin or Spanish cultures. Chilaquiles is a traditional Mexican dish that is super easy to make and is perfect for a Sunday brunch when you want something tasty!


This is a fairly quick breakfast, just cook some eggs of your choice, I choose scrambled. You can add black beans, chorizo or any type of meat or veggie. I really like them with just eggs, avocado, some queso fresca and cilantro. You can spice it up with salsa, creams, sour creams, hot sauces. It’s a great dish to play around with. You can even do a green or red enchilada sauce (or mole for a traditional flair).


Bag of tortilla chips (you can also or fry or bake tortillas of your choice)
Can of red enchilada sauce

Black Beans (Vegetarian) or Chorizo (optional)

Queso fresca
Eggs (scrambled or fried)
Sour cream (optional)
Hot sauce
To Make:
Cook eggs, scrambled or fried
Cook chorizo or black beans (optional)
Add tortilla chips in pot, pour enchiladas over, stir gently to not break chips
Add chips to bowl, add eggs on top, add chopped avocado, salsa, queso fresca, cilantro, sour cream, hot sauce, etc
