Sunday’s are my favorite, one of the main reasons is brunch! My weekday mornings are typically easy grab and go foods but on the weekend, I really want to savor some hearty breakfast food. My roots make me automatically love anything inspired by Latin or Spanish cultures. Chilaquiles is a traditional Mexican dish that is super easy to make and is perfect for a Sunday brunch when you want something tasty!
This is a fairly quick breakfast, just cook some eggs of your choice, I choose scrambled. You can add black beans, chorizo or any type of meat or veggie. I really like them with just eggs, avocado, some queso fresca and cilantro. You can spice it up with salsa, creams, sour creams, hot sauces. It’s a great dish to play around with. You can even do a green or red enchilada sauce (or mole for a traditional flair).
